Junko has recently started making her own, incredibly tasty, granola for breakfast. At Michael’s request we took the time to write-up and share the recipe.

Ingredients

  • Rolled Oats—200g
  • Mixed Nuts (Hazel Nuts, Walnuts, Almonds, etc)—Handful
  • Coconut Flakes
  • Olive Oil—2-3 Table Spoons
  • Maple Syrup—2-3 Table Spoons
  • Raisins—Handful

Method

  1. Pre-heat the oven to roughly 120ºC (250ºF).
  2. Mix all the ingredients (except for the raisins) with the olive oil and maple syrup.
  3. Spread the mixture evenly on a roasting tray.
  4. Bake for 1 hour 15 minutes, turning every 15 minutes.
  5. Allow the granola to cool and then mix in raisins.
